Italian Meatloaf:
 This great recipe was adapted from one of Emeril’s to make a meatloaf full of sun-dried tomatoes, pine nuts & other wonderful flavors & spices then it’s on special Marinara Sauce is made to accompany it. It’s great!

Sloppy Joes:
 Homemade like your mother made them! Enjoy on large buns with melted Muenster cheese on top. Chips on the side make a fast but filling meal.

Beef Brisket:
Another Personal Chef gave this recipe to me. This brisket is browned, then prepared under pressure w/ a wonderful wine sauce, then left to slow-cook in your crockpot. It’s great w/ fresh pasta & Parmesan cheese. Very tender!

Sirloin Fresh Herb Farfalle:
A fancy name for an old recipe that reminds everyone of his or her childhood. It’s full of fresh basil & parsley, beef, & bowtie pasta. Easily heated & freezes well. Given to me by Roseanne Pario, a Personal Chef on the Maryland Shore!

Tamale Pie:
  Ina
Kuller, a Personal Chef from San Diego, CA since 1993 gave this wonderful recipe to me. It’s a MUST. Sweet cornbread lines the bottom full of corn & green chilies (can substitute tomatoes) & topped w/ seasoned beef & cheese. Delicious!

Roast Beef Stuffed Bread:
  Fresh bread baked until golden after being stuffed w/ deli style roast beef, fresh mushrooms, onions & Jack cheese. Very delicious.

Tex-Mex Chili:
 
It’s for dinner tonight! You’ll find this excellent recipe simmering in your crock-pot when you get home from working all day. Top w/ sour cream & cheese.

Beef Stroganoff:
  Martha McGinnis, a Personal Chef in MI is the creator of this wonderful recipe. It’s a classic enjoyed over egg noodles after you add a dollop of sour cream.

Apple Meatloaf:
 A specialty of the chef! My own recipe is a sweet meatloaf that becomes everyone’s favorite w/ crisp Granny Smith apples & other unusual ingredients. Covered w/ a special apple juice reduction that Jim Davis added to it in the PCN forums. It’s baked in a muffin tin!

Very Special Lasagna:
 
This is quickly becoming my favorite new recipe! It’s topped with cheese and has a wonderful white sauce too. Freezes great.

Spiced Shepherd’s Pie w/ Feta-Potato Topping:
 This pie is full of fresh tomatoes, beef, onions and a blend of spices including mint, cinnamon, oregano & allspice. Yum!

Neno’s Pot Roast:
 My #1 requested dish. It’s marinated in my secret sauce & slow cooked to perfection w/ potatoes, carrots & onions in wonderful gravy. (Potatoes do not freeze well).

Mexican Casserole:
 An all in one dish w/ a blend of cheeses, ground sirloin, flour tortillas & other saucy ingredients. Freezes great too.

 Oven Roasted Peppers on the Half:
 Colorful fresh peppers stuffed w/ a blend of rice, cheeses, sauce and either turkey or beef. Freeze well & easily heated.

Shepherd’s Pie:
 A veggie & beef casserole full of gravy & topped w/ mashed potatoes. The perfect comfort food! Curl up on the couch w/ this one.

Bacon Mushroom Swiss Meatloaf:
 The combination of ingredients makes this a favorite! Perfect for high-protein diets.

Sharon’s Beef Stew:
YUM! It’s everyone’s favorite beef stew, marinated in my secret sauce then left in your crock-pot for a savory satisfying supper. Hearty and perfect for fall.

Cranberry Orange Pork Tenderloin:

Cuban Citrus Center Pork Loin:
 This marinated pork loin is oven roasted. The marinade contains cumin, garlic, OJ, sherry, lemon & lime juices.

Ina ’s Oven Baked BBQ Ribs:
 Melt in your mouth delicious. You won’t be able to get enough of this wonderful sauce! These ribs are the BEST. Marinated & slow baked.

Bacon Stuffed Bread:
 Fresh bread stuffed w/ crispy bacon, green onions, mushrooms & Jack cheese. This loaf won’t last long enough to freeze!

Italian Spaghetti Casserole:

Pistachio Chicken w/ Mustard Cream Sauce:
 Enjoy this pistachio crusted chicken w/ spices served with a delicious mustard cream sauce.

Chicken Marsala w/ Pancetta & Cream:
 Rich and wonderful featuring chicken cutlets in heavy cream sauce.

Poulet Grand-mère:
 Tender chicken breasts in a delicious red wine sauce using fresh herbs and grainy mustard. The skin will be left on this recipe.

Chicken Breasts with Herb Basting Sauce:

Neno’s Chicken Enchilada’s:
Creamy but low-fat enchiladas. Top w/ lettuce & tomatoes. One of my most requested entrées. A year-round favorite among my clients.

Munner’s Wings:
This depression era entrée is delicious! Given to me by my grandmother, these wings are irresistible & a family favorite for years.

Buttermilk Pecan Chicken:
Tender chicken breasts that are dipped in buttermilk before a coating of pecans are added. Thanks to Lynn Nelson for sharing this recipe.

Chiles Rellenos Casserole:
My favorite new Mexican recipe! Fluffy, yet dense; flavorful, yet mild; complex, yet uncomplicated. It’s a south-of-the-border “comfort classic.”

Country French Baked Chicken:
Roasted potatoes, carrots, & onions (mushrooms optional) are the perfect compliment to this wonderful baked chicken with savory gravy.

Fresh Seafood Baked w/ Tomatoes, Capers, & Herbs w/ a Feta Crumb Crust:

 These are scrumptious! Made w/ crabmeat and coated w/ Panko, a Japanese breadcrumb, they are perfect with the sauce.

Salmon Packet Supper:
 Salmon fillets are joined with spices, peaches, spinach, and low-fat yogurt to create this taste sensation. A packet for everyone!

Potato-Rosemary Crusted Catfish Fillets:
 An elegant fish dish w/ subtle rosemary flavors. Fresh sliced potatoes and garden rosemary infuse this culinary delight.

Broccoli Crawfish Casserole:
 This is so good you’ll think you were at Mardi Gras! A great Cajun influenced dish with a nice cheese sauce.

Orange Roughly Margarita:
  Baked fish marinated in tequila, triple sec, & fresh lime juice then topped w/ a tomato/onion/cilantro salsa.

Rosemary Roasted Salmon:
 Delicious salmon roasted with fresh rosemary from the garden. It’s drizzled with lemon juice too. SO delicious.

Greek-Style Scampi:
 Cooking Light voted this one of their 10 best recipes of all time. Enjoy it today. It’s baked w/ tomatoes, feta cheese, parsley, garlic, & lemon juice.

Shrimp Cakes w/ Creamy Roasted Red Pepper Sauce:
 A wonderful recipe given to me by another Personal Chef. Great cakes w/ an even better sauce!

Poached Salmon w/ Caper Sauce:
 Salmon served w/ a clear sauce & lemons over rice. Very delicious.

Shrimp Fettuccine:
 Christy, a Personal Chef in California gave this recipe to me. Enjoy this creamy shrimp recipe w/ fresh pasta & mushrooms today. It’s delicious.

Unfried Catfish:
 This recipe tastes like fried but is really baked. Less calories too! Recipe from Oprah Winfry’s personal chef!

Peppercorn Salmon:
  Salmon steaks that are baked w/ lots of pepper, fresh mint & basil, along w/ tomatoes in a lemon/Tamari sauce.

Pecan Crusted Salmon Filet:
 Fresh salmon brushed with butter, mustard, and honey then topped with bread crumbs and pecans. It’s wonderful!

Crunchy Bacon Crusted Roughy:
 A special Japanese breadcrumb is used for this great recipe that has special crunchy results. It’s baked. A Red Lobster recipe.

Roasted Salmon w/Tomato Basil Sauce
 Using a French technique, this salmon is cooked 2 ways & served w/ a delicious sauce.

Pan Fried Salmon Cakes:
  Cooks Illustrated has done it again w/ this recipe. Absolutely the best salmon cake around. Don’t miss this one!

Salmon w/ Spinach & Feta Cheese in Phyllo:
This is a wonderful fish entrée served wrapped in phyllo dough using spinach and three kinds of cheese.

Oven Fried Orange Roughy:
A specialty of the chef. A great blend of spices in a special breading, then baked. The best fish I’ve tasted.

Maryland Style Crabcakes:
Seasoned lump crabmeat fried in olive oil until brown. These little cakes are sure to please.

Rosemary-Roasted Salmon:
This recipe from Bon Appetit was given to me by another Personal Chef in Dallas, Donna Prall. It is SO delicious using garden fresh Rosemary

Pecan Crusted Salmon Fillet:
Oven baked fish w/ a nice nutty coating.

Catfish on the Ritz:
Fresh catfish fillets covered w/ crushed Ritz crackers & drizzled w/ honey. They are baked until flaky for a delicious entrée.

Vegetarian Selections

Caramelized Onion Lasagna w/ Gorgonzola Sauce:
 This is a great vegetarian selection with layers of cheese, delicious onions, and pasta w/ just the right spices.

Ultimate Veggie Burger:
 Made w/ lentils and garden fresh veggies, this burger is hearty. Heat quickly in a pan and enjoy them on whole grain goodness and ready to use condiments.

Addictive Sweet Potato Burritos:
 Personal Chef tested and client approved, this is one of Personal Chefs Network’s most requested recipe by clients in 2005.

Portobello Mushroom Bake:
 A yummy vegetarian dish that is flavorful w/ incredible sauce. I serve it with quinoa for a perfect flavor mix.

Mushroom Polenta Pie:
 Perfect low-fat selection that heats easily and features several varieties of mushrooms.

Black Bean Tamale Pie:
 A wonderful vegetarian rendition of a classic that sports black beans with a polenta (corn meal) crust.

High-Rise Pasta Pie:
 An impressive deep-dish vegetarian pie with penne pasta, Swiss chard, mushrooms, sun-dried tomatoes, pine nuts, and peas.

 A specialty of the chef. A wonderful lasagna w/ many kinds of fresh cheese, a great Merlot sauce, & meaty mushrooms. Freezes great. .

Hominy Chili w/ Beans:
 From Chef Jennifer Van Hoof’s kitchen in NY, enjoy this vegetarian soup. White hominy, red beans, & tomatoes make the base then sour cream & cheese top it.

Vegetarian Purses:
 Martha Stewart’s own recipe! If you love artichokes, spinach & roasted red peppers, wow, you are in for a treat! Wrapped in won-ton wrappers. AWESOME!

Buttercrumb Corn Pie w/ Tomato Salsa:
 If you love corn, don’t pass this entrée up. It’s a wonderful corn pie w/ a great salsa for a topping. (seasonal)

Roasted Garlic Potato Soup:
 Although this won’t freeze well, it’s worthy of this menu. The bacon & garlic make it hearty, but it’s low in fat & calories too.

Asparagus Quiche:
 Another crustless wonder with leeks, asparagus, mushrooms, & cheeses from Four Sisters Inns. Enjoy the fresh egg & cream filling today.

Eggplant Parmesan:
 This recipe is to die for, really! This recipe is from Ina Kuller, a successful Personal Chef in CA. It’s fabulous!!! At home, I sneak fresh Italian sausage in it, but you will have to tell me to do that for you. YUM……..

Calypso Burritos:
 From Canadian Living Magazine, a Personal Chef featured this recipe. With zucchini, carrots, mixed beans & onions, enjoy this baked tortilla topped w/ cheese.

Minestrone:
 A hearty soup that is made w/ beef stock. You will never miss the meat when you enjoy this wonderful comfort food.

Lentil Chili Pie w/ Cornbread Crust:
 This delicious, spicy vegetable chili makes a deep casserole covered w/ w wonderful cornbread crust.

Spinach Pie:
 Vegetarian pie w/ spinach, ricotta & Parmesan cheeses, onions, & spices. Martha, a Personal Chef in San Antonio, TX, gave this recipe to me.

Turkish Stuffed Peppers:
Contains rice, wonderful spices, walnuts, raisins, & apricots. Sweet & nutty……a REAL treat!

Greek Spinach Quiche:
A recipe from the kitchen of Personal Chef Jennifer Van Hoof in NYC. It has spinach, feta, and scallions to make up the recipe.

NOT Meatloaf:
This is an excellent vegetarian substitute for meatloaf full of flavorful spices. Ina Kuller, once again, shares a killer recipe!
